Ingredients:

  • 3 15 oz cans of whole kernel corn
  • 1 stick cream cheese(low fat)
  • 1 red pepper, chopped
  • 1 small can of diced green chilies
  • l heaping teaspoon of Pitts and Spitt’s Hot and Spicy Seasoning
  • 3 tablespoons of Feta Cheese crumbs
  • Chopped cilantro

Putting it all together:

In a small sauce pan, cream the cheese until melted. Add the chopped red pepper, chilies and the Hot and Spicy, cook about 2 minutes, drain and stir in the corn. Cook until corn is thoroughly warmed. Pour into a serving dish, sprinkle with Feta, cilantro and a little Hot and Spicy. Serve warm. Wonderful with BBQ or fried chicken.
