It’s a classic — one with which you can’t go wrong! In this recipe video, we’re showing you how to cook up steak and smashed potatoes while using your Maverick 1250 Pellet Grill from Pitts & Spitts.
Ingredients:
Prime Ribeye or steak of your choice – remember, quality matters!
Baby potatoes (about 1 lb for two servings)
Broccolini
Pitts & Spitts Steak Seasoning
Pitts & Spitts Sweet & Spicy Seasoning
Olive Oil
Duck fat spray
Thyme
Salt
Pepper
Instructions:
Set grill temperature to 425, making sure you have the P&S stainless steel griddle in place
Potatoes:
Bring potatoes to a boil in a large pot of water generously seasoned with salt
Cook until fork tender, about 8 minutes.
Drain and let cool slightly, about 10 minutes.
Spray a baking sheet with coconut oil
Arrange potatoes on baking sheet and lightly crush each potato with the heel of your hand until potatoes are about ½ inch thick
Spray potatoes with duck fat
Season with salt and pepper and sprinkle with thyme
Place potatoes on the grill, turning halfway through baking time, until golden and crisp, about 25 minutes
Broccolini:
Place the broccolini on a baking sheet and drizzle with olive oil and P&S Sweet and Spicy seasoning
Place on the grill for the last 12 minutes while the potatoes are still cooking
Steak:
Season the steak with a healthy dose of P&S Steak seasoning
Place the steak on the grill for 5 minutes, then flip over and let it sear for another 5 minutes
Remove from grill and let it rest for another 5 minutes
The grilling times can also be adjusted based on how you prefer your steak cooked
